Egg Free, Dairy Free Sponge Cake Recipe

and Dairy free buttercream recipe


This recipe is great for both small cakes and large cakes and can also be used as a sponge pudding.

 

Egg Free, Dairy Free Sponge Cake:

you will need:

150g/6oz self raising flour (or 6 oz plain flour with 1 1/2 tsps. baking powder)
50g/2oz dairy free margarine
50g/2oz sugar
1/4 tsp bicarbonate of soda
1tbsp golden syrup
1 dessertspoon vinegar
soya milk to mix




1. Preheat the oven at 180 C.
2. Sift the flour and bicarbonate of soda.
3. Rub in the margarine and stir in the sugar.
4. Add vinegar and golden syrup.
5. Slowly add enough milk to make a sticky consistency.



Small Cakes: Makes 12. Fill the cake cases 2/3 full and bake for about 12-15 minutes.

Large Cakes: This will fill a small loaf tin, but to fill a larger cake tin, it is best to double the recipe.

Sponge Pudding: This can be cooked in the microwave in 4 minutes. Just make the recipe as normal, put it into a microwavable bowl and add jam or syrup.

Variations:

Chocolate: Replace 1/2 oz of flour with 1/2 oz of cocoa and make as usual . Using brown sugar instead of white gives it a lovely taste.

Coffee: Follow the recipe up to point 4. Put a few spoonfuls of instant coffee into a little hot water and mix with the dry ingredients.  Carry on with recipe.


Dairy Free Buttercream

you will need:

50g/2oz dairy free margarine
100g/4oz icing sugar *


1. Mix together to make a soft spreadable mixture.

Variations:

Chocolate: Add a couple of tsps. of cocoa powder to the icing sugar.

Coffee: Add a tbsp. of strong coffee and a little extra icing sugar so the buttercream is not too sloppy.

 *Some icing sugar may contain egg. I usually use Tate and Lyle, which is safe :)
