Gluten, Egg and Dairy Free Banana Cupcakes

This week's recipe is my first gluten free one, so I hope you like it!

Gluten, Egg and Dairy Free Banana Cupcakes
and Banana Icing 

Makes 12-18

You will need:


50g/ 2 oz Dairy Free Margarine
225g/ 8 oz Gluten Free Self Raising Flour      
150g/ 5oz  Caster Sugar
2 Ripe Bananas                                   
2 drops Vanilla Essence
Egg Replacer (the equivalent of 2 eggs*)                 




1. Preheat oven to gas mark 5/ 190C.
2.Cream margarine, sugar and vanilla essence.
3. Mash bananas and add them and the flour along with the egg replacer. Mix well.
4. Fill cupcake cases 2/3 full and for 15 minutes.
5. Cool completely on wire rack before icing.




Variations:

  • This also makes a loaf. Make recipe as above, but place in a 675g/ 1 1/2 lb tin loaf or larger. Bake for 1 hour.
* I use Organ's No Egg egg replacer.


Banana icing 


You will need:

50g/ Dairy Free Margarine
400g Icing Sugar
1 Mashed Banana
1teaspoon Lemon Juice
2 drops Vanilla Essence



1.Cream margarine, mashed banana, lemon juice and vanilla essence.
2.Slowly add icing sugar to make spreadable icing.

  3. I've only ever tried cooking with gluten free flour once and it was a disaster! Though with bananas I am generally ok #KCACOLS

  7. How handy is this post for me. My daughter has been asking constantly that she wants a banana cake. I think we should try these banana cupcakes instead!! They look so yummy as always!
