This week's recipe is a yummy one!

Egg Free And Dairy Free Chocolate and Courgette Brownies

you will need:

125g Vegetable oil                           250g Plain Flour
2tsp Vanilla Extract                         1 1/2 tsp Bicarbonate of soda
40g Cocoa Powder                          300g Caster Sugar
1tsp Salt                                          250g Grated Courgette (skin left on)

1. Preheat the oven to gas mark 4/180C and grease and flour a 22x30cm tin.
2. In a large bowl mix together oil, sugar and vanilla essence until well blended,
3. Combine flour, cocoa powder, bicarbonate of soda and salt. Stir in the sugar mixture.
4. Fold in the grated courgettes.
5. Spread evenly in the tin.
6. Bake for 25-30 minutes until brownies spring back when touched.
7. Allow to cool before cutting.


I like to use a 7" square tin. It will need a little longer in the oven, but the brownies are a bit bigger!
Also, don't worry if the mixture seems a but do. Once you've added the courgettes the mixture changes!
